Healthy Huevos Rancheros

A veggie-rich breakfast couldn’t be any easier.

Serves: 4

INGREDIENTS

1 bag Eat Smart Southwest Salad Kit

1/2 red onion, diced

1 14.5 oz. can stewed Mexican tomatoes

1 15 oz. can black beans, drained

4 large eggs

Canola cooking spray

Directions

Heat a large skillet over medium flame. Spray with canola cooking spray and add onion. Sauté for four minutes. Add vegetables from Salad Kit and continue to sauté until softened, about four more minutes. Add tomatoes, black beans and dressing from kit and sauté until warmed through.

Meanwhile, heat a small skillet with canola oil spray and fry eggs according to personal preference.

To serve, divide veggie/bean mixture amongst four shallow bowls or deep dishes. Top with fried egg, sprinkle with cheese, corn and tortilla strips from salad kit.
