An Asian inspired favorite takes a low-carb turn.
1 tbsp olive oil
1/2 cup onlion, diced
1/2 cup carrots, diced or shreded
1 clove garlic, minced
2 1/2 cups Eat Smart Cauliflower Rice
1/2 cup peas (fresh or frozen)
1-2 tbsp soy sauce
1 egg, lightly beaten
Salt & pepper
Heat 1 tbsp olive oil in large (12″) non-stick pan. Add onion, carrot and garlic. Sauté on medium heat for 2 minutes. Add Eat Smart Cauliflower Rice, peas and soy sauce. Sauté for additional 2 minutes until the Cauliflower Rice is heated through. Spoon mixture to one side of pan. Raise heat and pour egg into empty side of pan. Scramble egg until cooked through. Mix all ingredients and season to taste.
For added protein try grilled chicken.
Garnish with scallions.
